Spicy Italian Sausage Pepper & Onion Bow Tie Pasta

I created this recipe one night while in the middle of making a batch of my homemade sausage. With a kitchen full of hungry family waiting to be fed, and 2 giant bowls of fixed sausage meat waiting to be stuffed into soaking casings, I decided to halt sausage production and feed the family. Using what I had on hand, I threw together this delicious pasta dish in less than 30 minutes and resumed production.  Although I may have used my own homemade sausage meat to create this recipe, it can easily be duplicated by using any “Sweet Italian” sausage meat. For those living close to Gloucester, I highly recommend buying Trupiano’s Italian Sausage sold at The Cave on Main Street. Spicy Italian Sausage Pepper & Onion Bow Tie Pasta

Ingredients

1/4 cup olive oil; plus 3 tablespoons

5 cups tomato parsley & cheese loose sausage meat (approximately 2 lb.)

1 red pepper; sliced

1 orange or yellow pepper; sliced

1 large sweet onion; sliced

5 large cloves fresh garlic; minced

½ teaspoon red crushed pepper flakes

11 14 oz. can stewed tomatoes in tomato juices

1 28 oz. can Crushed tomatoes

2 tablespoon tomato paste

tablespoon Italian Dried Oregano

½ teaspoon kosher salt

1 teaspoon freshly ground pepper

1 lb bow tie pasta; cooked al Dente

¾ cup freshly grated Parmesan Cheese

Step-by-Step

1  heat ¼ cup olive oil in large dutch oven pan over high heat; add sausage meat; scramble meat and cook well; reserve cooked meat

2  in same dutch oven pan; add peppers, onion, red crushed pepper flakes, garlic and 3 tablespoons olive oil saute 3 minutes; add cooked sausage meat; mix well

3  add crushed and stewed tomatoes, Italian Dried Oregano, salt and pepper; cook 15 minutes on medium high heat; stir often

4  add cooked pasta; toss well; ladle into serving bowls; top with freshly grated Parmesan Cheese
